During a particularly difficult period in his career, popular Kannada actor, Shine Shetty took up cooking to stretch his meagre resources and feed himself. Cooking in those difficult times led him to mull the idea of setting up a food truck venture for his livelihood. Rustling up a loan from well wishers, he found a second auto that he could afford. Thus began Galli Kitchen, a streetside food enterprise, a far cry from the world of glitz and glamour that Shetty was once used to. Two years on though, Galli Kitchen seems to have changed the fortunes of its owner, and has now upgraded to a full-sized food truck. I catch up with this affable actor over an inspiring chat, and also taste some of the popular fare here.

Sabakki Idli
An idli that isn’t too thick to hold, but weighty nonetheless owing to the sabudana or tapioca pearls. The aroma of the dill takes over the palate when placed in the mouth, the texture is a bit gummy. The idli is the sort that comes alive when combined with the chutneys, especially the spicy and sour notes of the kempu chutney.

Mysore Masala Dose
Shine Shetty’s ode to the 99-variety style of dose that would sustain him during his acting school days in Mumbai. The dose is crisp when it leaves the tava, but weighed down to a soft texture by the loaded stuffing of masala, fresh onions and tomatoes, when gathered into a tight roll. The spicy-sweet flavour of the podi is discernible above the fresh crunch of the veggies. Not a dose for the purist, but a tasty and filling one nonetheless.

Neer Dosa Bela Kai
This is how Mangaloreans love to eat their neer dose for breakfast with a lip smacking accompaniment of fresh coconut, jaggery and ghee combined together with a touch of cardamom. Simple yet delicious, and a must order to finish your thindi experience on a sweet note at Galli Kitchen.
